Introducing the Husband and Wife team behind Apollo Fitness. Mitch and Milly have a shared passion for health and fitness and express this in their daily running of Apollo Fitness.

Mitch’s 14 years experience as a Personal Trainer and his success as a top NZ athlete in Jet Skiing along with Milly’s passion for building a community and integrating health and fitness in to clients lives makes them the ultimate power couple behind the business.

Mitchell Ellis

(General Manager)

Mitch has a Diploma in Sport and Fitness, Representative Level Tennis, Rugby and Athletics, and a 6 times New Zealand Jet Ski Champion, Mitch specializes in athlete performance, HIIT training, circuit training, and has a particular interest in endurance based events and disciplines which he competes in himself.

Mitch has been a personal trainer for 14 years. He was brought into the industry by his own personal trainer and mentor. Mitch is married with two kids and lives a very active lifestyle within his family and own sport, which transfers across into his work and beliefs about fitness.

Mitch played several sports at representative level and wanted to continue with his own high performance knowledge and experience by helping others unlock their potential. He always tried to be the fittest on the sports field even if he wasn’t the biggest or strongest. That’s where his passion for it began.

Karen Williams

With over 18 years of my own gym experience and now a fully qualified Personal trainer, I’m passionate about helping others improve their health and fitness goals.

As a Mum of 4 I know how stressful life can be, but I also understand the multiple benefits that come from looking after yourself, achieving goals you never thought possible, and improving your overall health.

I’m excited to help you become your best you yet.

Cory Harris

Cory is an experienced New Zealand and UK REPs registered Personal Trainer and ASCA Level One Strength and Conditioning Coach. Cory was a Professional Rugby Player in the UK for six years after playing Representative Rugby for Canterbury, NZ. He has competed against, trained, and played alongside world class athletes both in New Zealand and Europe. Cory has now turned his focus on coaching and empowering his clients to overcome their barriers and create positive, long lasting changes in their lives.

“Hi! I’m Caleb, and I’m super thrilled to be joining this amazing Apollo Fitness team and boutique gym space. 

 While young in the fitness industry, I’ve garnered up a lot of training experience in Christchurch already. I have been coaching for several years now, and studied for two years to cover a Level 6 Diploma in Sport, Recreation and Performance. 

 I look forward to taking a step into working 1-on-1 with clients, as I believe I can make the most impact in this space. I’m most interested in helping get people introduced to exercise, or working with those who value longevity and movement for a better quality lifestyle. My long-term hope is to help as many people as I can so they can live stronger and happier each day!”

henry russell

Henry brings a wealth of knowledge, energy, and hands-on experience to every session.

After completing his Communications Degree at the University of Canterbury, Henry decided to pursue his true passion: health, fitness, and personal wellbeing. Since then, he has developed a broad and dynamic skill set — from CrossFit and Olympic lifting to injury prevention and Rehabilitation, as well as Strength Training — before transitioning into one-on-one and small-group personal training here at Apollo Fitness in July 2025.

Since 2018, Henry has been part of high-performance training environments as both a player and leader in Rugby and Australian Rules Football, representing at local, national, and international levels. With over five years of elite-level experience, he now applies that same level of focus and care to helping individuals of all backgrounds improve their movement, strength, and confidence.
